Parker & Quinn – if you’ve been to the Refinery Hotel, you’ve likely walked through Parker & Quinn and just didn’t realize it. Uproxx Features The Boogie Room in Bartenders Tell Us The One Rum They’d Bring If They Were Stuck On A Desert Island

Spencer Elliott, head bartender of The Boogie Room in New York City

The sailor in me always comes out in my rum choices. My first and only pick is Mount Gay Rum. Born in the Sailing Era in Barbados, I can almost taste the islands when in a daiquiri or just as a highball. It truly is a bottle that keeps me saying, “where has all the rum gone?”.

“My new favorite obsession is aquafaba, the liquid leftover from cooked chickpeas. As unappetizing as that might sound, it is starchy and works similarly to egg whites in recipes. Aquafaba can be used to create a variety of vegan items, including butter, mayo, pasta dough, cheese, cocktails, and desserts.”

Spencer Elliott, head bartender of The Boogie Room in New York City

I love anything the guys at Montauk Brewing Company do. When they came out with a Pilsner I rejoiced. With all the IPA hype nowadays, I often find myself desperate for a light and balanced option. Pilsners, especially the one Montauk Brewing makes, fits that bill.
