Raise a glass to this summer’s hottest drink

“Agave spirits are still going strong heading into 2026. I think the drink of the summer will lean citrus-forward, with flavors like yuzu and grapefruit leading the way,” agreed Nancy Santiago, beverage director at IGC Hospitality. “The Paloma is poised to be a breakout star – I’ve seen both the classic and modern variations appear on cocktail menus, and guests are consistently ordering it. It’s light, refreshing, tart and easy to drink.”

Restaurant Business

Multiconcept group In Good Company Hospitality, with 18 venues, mostly in New York, has temporarily transformed the restaurant El Lugar into The Matchbox, with turf, games and a 136-inch screen.  Some of the programming is also being applied to sister venues, but Matchbox, which is in a hotel, aims to be a World Cup hub. Founder Terence Tubridy estimates he has invested roughly $75,000 to $100,000 for the space and audio/visual equipment.

Restaurants Aren’t Really Charging People For Skipping Reservations Anymore

Eater

Terence Tubridy, founder of IGC Hospitality which owns Refinery Rooftop, Park Avenue Tavern, and Margie’s at The Rockaway Hotel, only charges diners who cancel on high-demand nights like Thanksgiving or New Year’s Eve. “This is not as a punishment, but to safeguard and protect the business,” he said. But he is also flexible and tries to work with customers who are charged so the relationship is not lost. “If a guest reaches out about a charge, that is an opportunity to engage and talk and make it right. We will credit it back, apply it to a future table, and help folks understand the economics of loss.”

Vintage Green, A Sprawling Indoor/Outdoor Rooftop Opens Atop The Shelburne Sonesta Hotel In Murray Hill

What Now

Vintage Green, the newest – and largest – rooftop from IGC Hospitality (Refinery, Royalton Park Avenue and Glass Ceiling rooftops) offers a unique indoor/outdoor dining, cocktail and performance space atop the Shelburne Sonesta Hotel in Murray Hill. The 11,000-square-foot space pays homage to the parks scattered throughout the city by combining sophisticated New York City design elements and a charming garden atmosphere that offers city skyline views from a wrap-around terrace. Several seating areas provide a variety of dining and drinking experiences that feature New York City-centric culinary treats – such as hotdogs, oysters, and caviar service provided by Chef Chris D’Ambrosio (formerly of Bouley). Beverage Director Nancy Santiago’s elevated, unique, and classic cocktails complete the dining experience.

The Strong Buzz

Of course, the name ‘the glass ceiling’  has a higher purpose. It is a metaphor that has long been used to represent the crushing invisible barriers that prevent women and underrepresented communities from rising beyond a certain level in the patriarchy. In partnership with Luminary, an inclusive membership-based career and personal growth platform and collaboration hub, (including an 11,000 sq ft physical space one floor below), the restaurant is run by IGC Hospitality (the folks behind Rockaway Hotel) and features women-owned brands and makers, like Heather Greene’s Milam and Greene Whiskey, female champagne and wine growers like Bodvar Rosés, and more. The goal is to empower the community to break through “The Glass Ceiling.” I’ll drink to that.
