Infuse Your Tequila
“One easy way to upgrade your average margarita is to infuse your tequila!” says Will Benedetto, director of bars at In Good Company Hospitality, a restaurant group based in New York City. “This adds an extra depth of flavor and richness to the already delicious cocktail. At The Wilson for our Garden Margarita, we infuse our tequila with avocado. We use discarded pits and skins from the kitchen and soak them in tequila for 24 hours so the trademark avocado flavor melds with the liquor.”
